Salad Dressings

Ginger & Sesame Salad Dressing
Put 1 teaspoon sesame oil, 3 teaspoons rice wine vinegar, 1 teaspoon
finely grated orange rind, 2 tablespoons orange juice and 2 teaspoons
grated fresh ginger in a small jug. Gradually whisk in 1/2 cup (125 ml/4
fl oz) vegetable oil until well blended. Season with salt and freshly
ground black pepper.
Makes about 3/4 cup (185 ml/6 fl oz)
Chili Lime Salad Dressing
Put 1/4 cup (60 ml/2 fl oz) lime juice, 2 tablespoons fish sauce, 1-2
teaspoons sambal oelek and 1 teaspoon sugar in a small jug. Using a
small wire whisk or fork, gradually whisk in 1/4 cup (60 ml/2 fl oz)
vegetable oil in a thin stream until well blended.
Makes about 3/4 cup (185ml/6fl oz)
Thousand island Salad Dressing
Put 1/2 cup whole egg mayonnaise, 1 tablespoon tomato paste, 1
teaspoon Worcestershire sauce, 1 teaspoon French mustard and 2 teaspoons
chilli sauce in a small bowl and stir until well combined. Season with
salt.
Makes about 1/2 cup (125ml 4fl oz)
Balsamic Salad Dressing
Whisk 2 tablespoons balsamic vinegar and 1 teaspoon French mustard in
a small jug until combined. Gradually beat in 1/3 cup (80ml 2 3/4fl oz)
extra virgin olive oil. Season with salt and freshly ground black
pepper. Cut 1 small clove garlic in half, skewer onto a toothpick and
leave in the dressing to infuse for at least 1 hour.
Makes about 1/2 cup (125ml 4fl oz)
Basic Vinaigrette (French Dressing)
Combine 1/2 cup (125ml 4fl oz) extra virgin olive oil, 2 tablespoons
white wine vinegar and 1 teaspoon sugar in a small jug. Whisk with a
small wire whisk or fork until well blended and season with salt and
freshly ground black pepper.
Makes about 2/3 cup (170 ml/51/2 fl oz)
Lemon Soy Salad Dressing
Put 2 tablespoons soy sauce, 2 tablespoons rice wine vinegar, 1
teaspoon honey, 2 tablespoons lemon juice and 1 teaspoon finely grated
lemon rind in a small jug. Gradually whisk in 1/3 cup (80 ml 2 3/4fl oz)
vegetable oil in a thin stream until well blended. Season with freshly
ground black pepper.
Makes about 3/4 cup (185 ml/6 fl oz)
Basil Garlic Salad Dressing
Process 1 clove garlic and 2 tablespoons chopped basil in a food
processor or blender until finely chopped. Add 1/4 cup (60 ml/ 2fl oz)
lemon juice and process in short bursts until combined. Gradually add
1/2 cup (125ml 4fl oz) extra virgin olive oil and process until
combined. Season with salt and ground black pepper.
Makes about 3/4 cup (185ml 6fl oz)
Blue Cheese Dressing
Mash 80 g (2 3/4 oz) blue cheese with a fork to a chunky paste. Add
1/2 cup (125g 4oz) whole egg mayonnaise, 1/4 cup (60g 2oz) sour cream,
and freshly ground white pepper to taste. Stir in 1 tablespoon chopped
chives and 1 teaspoon white wine vinegar.
Makes about 1 1/4 cups (315ml 10fl oz) |
